We are always looking for candidates who are invested in our amazing dining experience and love food. At Carmine’s, our Sous Chef is ultimately responsible for ensuring that all meals coming from the kitchen are well prepared with regard to quality, consistency, taste and food cost. Chefs provide training for all staff; meet restaurant quality standards; assist in establishing and enforcing food specifications, portion control, recipes and sanitation; and control food and labor costs while maximizing guest satisfaction.  This Sous Chef position is paid hourly.

Essential Functions of the Position:

  • Minimum of three years kitchen management experience
  • Ability to work in a high-volume, fast-paced work environment
  • Strong leadership skills with the ability to effectively manage and motivate a diverse staff
  • A strong understanding of Food & Beverage preparation techniques and health department rules and regulations
  • Ability to handle multiple tasks, prioritize work load, in a deadline driven, demanding environment
  • Must be organized, self-motivated, proactive, a strong attention to detail
  • Knowledge of restaurant finances, profitability and scheduling
  • Proficient computer skills
  • Oversee daily operations, supervise line employees
  • Fill in as needed. Expedite. Assist with purchasing product.
  • Excellent cooking skills
  • Bilingual (Spanish) both written and verbal
  • Experience as a Sous Chef required
  • Large volume experience preferred
  • Must be able to stand the entire shift
  • Lift 20 – 30 pounds during the shift, plates, product, etc.
  • Must be available to work all shifts

The maintenance team exists to support the global Google Food program and its values both to Googlers, and to the vendor partners.

Role Summary:


Responsible for receiving storage and inventory for all departmental supplies and food stuff, along with maintaining sanitation in storage areas.

Checks in, stores, and maintains all deliveries and food/supply storage areas. Participates in inventory and ordering as well.

Essential Duties and Responsibilities:


 

  • Inventories and maintains necessary food and other supplies to ensure efficient operation of the Food Service Department.
  • Stores food and supplies in correct containers and in proper storage areas according to department guidelines as indicated by non-spoilage of food.
  • Maintains records and logs documenting storage temperatures of perishable food items per standards.
  • Dates, labels, and rotates stock according to procedures as indicated by oldest product being utilized first.
  • Orders food and supplies based upon product specification as established by company ordering protocols and procedures.
  • Secures designated areas of potential theft, dangerous chemicals, supplies and equipment to safeguard associates. Follows all security procedures regarding storeroom organization.
  • Transports food and supplies in appropriate containers or vehicles as indicated to ensure food or supplies arrive safely and intact.
  • Follows HACCP guidelines when receiving and distributing food supplies to ensure quality and safety of food supply.
  • Reports needed maintenance or repairs of equipment used to proper resources.
  • Completes all daily, weekly or monthly reports as outlined in the corporate policies and procedures on a timely basis meeting all prescribed deadlines.
  • Identifies and utilizes cleaning chemicals following directions recommended by manufacturers and per MSDS sheets. Utilizes equipment in performing job functions according to department safety procedures.
  • Performs other duties as assigned.

Hours:

  • 30 Estimated hours per week
  • M, T, TH, F 6:30am-2:30pm

Salary:

Hourly: $12/hr to $15/hr

Required Skills:

  • Must be able to lift 50 to 75lb, be on your feet all day, work independently but also in harmony.
  • Product identification and knowledge is key.
  • HACCP, ServSafe, and FIFO

Wash and disinfect kitchen area, tables, tools, knives, and equipment. Check and ensure the correctness of the temperature of appliances and food.

Required Skills

Entry level. The ideal candidate has 1-2 years prior cook experience. Willing to groom the ideal candidate.

Serve food courses and alcoholic beverages to guests. Set tables according to type of event and service standards. Answer questions on menu selections. Communicate with the kitchen regarding menu questions, the length of wait, recook orders, and product availability. Communicate additional meal requirements, allergies, dietary needs, and special requests to the kitchen. Record transaction in MICROS system at time of order. Check in with guests to ensure satisfaction with each food course and/or beverages. Pick-up trays and clean tables as needed to ensure a clean dining area. Maintain cleanliness of work areas, china, glass, etc., throughout the day. Maintain cleanliness of work and guest areas by clearing, collecting and returning food and beverage items to proper area. Complete closing duties, including restocking items, turning off lights, etc. Present physical and accurate check to guest and process payment.

Required Skills

The ideal candidate has fine dining server experience.
